Oliver Romero

Oliver was born in Mexico and raised in Sacramento, California, where his appreciation for hospitality and fine dining began at an early age. Although he initially pursued Accounting in college, he quickly realized his passion lay elsewhere. Drawn to the endless opportunities for learning and connection through wine, he chose to dedicate his career to the restaurant industry - a decision that has shaped more than twenty years of professional experience.

Throughout his career, Oliver has had the opportunity to work alongside some of Sacramento’s most respected hospitality professionals, refining his craft in both service and wine. His experiences have strengthened his belief that exceptional hospitality is built on genuine relationships, thoughtful service, and a commitment to continual learning.

Today, Oliver is a Certified Sommelier with the Court of Master Sommeliers and is currently preparing for the Advanced Sommelier Certification. Joining the team at Allora has been a long-time professional goal, and he is grateful to be part of a restaurant that shares his passion for Italian cuisine, world-class wines, and unforgettable guest experiences.

Outside of the restaurant, Oliver enjoys spending time with his wife and two young children while continuing to expand his knowledge through books and lifelong learning. Whether studying wine, history, business, or discovering new subjects, he believes there is always something new to learn - and another great bottle waiting to be shared.
